Reteta de pui crocant cu pesmet japonez este una dintre preferatele sotului meu, mai ales cand vine vorba de un pranz rapid. Ii place extrem de mult puiul preparat in acest fel, dar recunosc sincer ca nu-l prepar foarte des pentru ca incerc ca nu mancam alimente prajite prea des. Daca ar fi dupa el, sunt convinsa ca nu ar refuza acest fel de mancare nici daca l-as prepara zilnic.

PUI KFC | Pui crocant | Pui crispy

⬇️ Ingrediente și mod de preparare
700 g piept de pui

👇 Pentru marinadă:
2 ouă
120 ml lapte
2 linguri zeamă de lămâie
1 linguriță sare (rasă)
1/2 linguriță piper
1 linguriță turmeric (curcuma)
1 linguriță ghimbir
1/2 linguriță boia dulce/iute (în funcție de cât de picant doriți)
2 lingurițe praf de usturoi
2 lingurițe cimbru
2 lingurițe ulei de măsline
ulei pentru prăjit

👇 Pentru crusta cu fulgi de porumb:
80 g făină
80 g fulgi de porumb sfărâmați
1/2 linguriță sare
1/2 linguriță piper
1/4 linguriță turmeric
1/4 linguriță ghimbir
1/2 linguriță boia dulce/iute/chilli (în funcție de cât de picant doriți)
1/2 linguriță praf de usturoi
1 linguriță (5g) praf de copt

👇 Pentru crusta cu făină:
120 g făină
condimentele de mai sus
1 linguriță (5g) praf de copt

☑️ Se porționează pieptul de pui în bucăți de forma și dimensiunea dorită.
☑️ Se prepară marinada din ouă, lapte, zeama de lămâie, uleiul de măsline și condimentele.
☑️ Se pune carnea în marinadă și se înțeapă din loc în loc pentru a absorbi mai bine marinada. Se acoperă cu folie și se lasă la marinat în frigider pentru cel puțin o oră.
☑️ Se pregătesc 2 amestecuri pentru crustă: unul cu făină, fulgi de porumb sfărâmițați, condimente și praf de copt (pentru pui crispy) iar celălalt cu făină, condimente și praf de copt (pentru pui gen fillet bites).
☑️ Se trec jumătate din bucățile de pui prin primul amestec. Apăsăm bine cu mâinile pentru a se lipi bine crusta. Dacă doriți mai multă crustă puteți trece încă o dată bucata de pui prin marinadă și fulgi.
Trecem și restul bucăților prin al doilea amestec.
☑️ Prăjim pieptul în ulei încins la foc mediu pentru circa 3 minute pe fiecare parte.
Se scot pe prosop de hârtie.

INGREDIENTS:
• 1 (15-ounce) can of black beans, drained and rinsed
• 4 cloves garlic
• 1 chipotle in adobo sauce, optional
• 1 tsp each: cumin, ancho chili powder
• ½ tsp each: salt, pepper, garlic powder
• ¼ tsp cayenne powder, optional
• Vegetable oil, for frying
• 6 tortillas
• ½ cup shredded cheese
• Shredded lettuce
• Salsa or Pico de Gallo
• Fresh lime wedges, for serving, optiona
Place the black beans, garlic, chipotle pepper, and seasonings in a food processor, and pulse until smooth. Taste and adjust seasonings, if necessary. Spread a few tablespoons of the black bean mixture into each tortilla, followed by 1 to 2 tablespoons of the cheese. Fold in half and set aside. Heat a couple teaspoons of the oil in a large nonstick skillet over medium heat. Working in batches, fry the tacos until golden and crispy, 2 to 3 minutes per side. Fill each taco with lettuce and serve with your favorite salsa and fresh lime wedges, and enjoy!

CRISPY PORK BELLY⤵️

2.5-3 lb pork belly

MARINADE (BROWN)
1 TBSP ketchup
2 tsp sugar
1 tsp salt
1 tsp five spice
1/2 tsp black pepper
- mix this together

VINEGAR MIXTURE (WHITE)
1/2 tsp salt
1 tsp vinegar
- mix this together

1. Poke a bunch of holes onto the skin side of pork belly

2. On the meat side of your pork belly, cut slits into it. About 1.5 - 2 inches apart from each other and 1-2 cm deep

3. On the meat side of your pork, coat it with your MARINADE. Make sure you get in between the slits and on the sides

4. On the skin side, wipe off any marinade and any other liquids. Then coat it with your VINEGAR MIXTURE.

5. Then lay your pork belly on a piece of foil (skin side up) and form a boat around your pork belly with the foil. (watch video for clarification).
-Then refrigerate your pork belly un covered for at least 3 hours

6. After 3+ hours, place pork belly onto an oven safe dish lined with foil — skin side down. Bake at 400F for 20 mins on the middle rack.

7. After 20 mins of baking, remove pork belly from oven and flip it over. The skin side should now be up.
- Poke a bunch of holes into the skin and pat the skin dry.
- Apply another layer of your VINEGAR MIXTURE all over the skin. You do not need to poke holes at this point.
- Bake at 400F for another 20 minutes (total 40 mins bake time)

8. Repeat step 7 one more time. You’ll start to see bubbles on the skin at this point

9. After a total of 60 minutes baking, switch to broil and broil for 5 minutes. Keep an eye on your pork belly so it doesn’t burn. The skin will crackle/ bubble up some more.

10. Allow to cool skin side up (if you cool skin side down, the skin will become soggy and no longer crispy. Learn from my mistake)

11. Once cool, cut to desired side. I cut following the incisions I made.

12. Enjoy =)

If you want to do some stovetop pan frying, check out this safety stuff. Most importantly: high temperature oil, and make sure it doesn't get too hot (I keep it below 350...a lot of recipes say you need it at 375 but that's hogwash.) Honestly just bake them or go to a restaurant.

RECIPE

1 pound of ground chicken
a few pieces of ground bread
1 tablespoon of garlic powder
1 or two teaspoons of cumin
1 or two teaspoons of mustard powder
literally any spices you want
1 teaspoon of salt
some pepper pepper pepper
mash it all together and flex your wrists
oil up your hands and do some Turkish wrestling
or shape the nuggets
or flatten them out and cut them
scramble an egg and dip them
then dip them in panko and pat them on the back
heat a small amount of oil to around 300 degrees (for gods sake monitor your oil temperature)
and USE TONGS to put the nuggets in. Also use them to take the oil out
Grip firmly. Dropping anything into hot oil is very bad news
Flip them after a coupe minutes
make sure they get to at least 165 degrees F
If you don't own a food thermometer this is your sign to buy one today
They are inexpensive and it will change your relationship with cooking because
you'll know for sure when something is cooked and you won't have to overcook it

How to deep fry safely:

So...
I started using chicken thighs but switched to breasts to make it thicker
You can pound or slice the breasts do your desired thickness
This recipe is good for around 4 burgers, or two breasts divided/pounded and cut, or 4 thighs probably

THE BRINE
1 cup buttermilk
2 teaspoons salt
You can add spices but I'm pretty convinced they're not gonna soak in
Wangjangle that salt until dissolved then put your chicken in the brine for at least a couple but ideally 6 hours in the fridge in an above ground pool or IV bag

Oh by the way that's the chicken I mentioned above that you're putting in

THE SLAW

Shred or chop some cabbage and carrots. Like a cup of each
On part mayo, one part sour cream, one part red wine vinegar or another one for the dressing
Some pepper pepper pepper. Did I even put that in the video? I think I just remembered that I forgot.

THE DREDGE
1.5 cups flour
2 tablespoons of corn starch
2 teaspoons baking powder
2 tablespoons garlic powder
A whole bunch of chipotle powder or a non dangerous amount of cayenne or literally whatever else you want to flavor it with

Once the chicken has had it's bath, drop some drops off the chicken into the dredge to create little powdery globules to add more texture to the chicken, then mash the chicken in there, cover it up, flip it around or whatever

Heat your oil to 350 degrees Fahrenheit. If you don't have a fryer, or an oil/candy thermometer, order takeout. Never let your oil temperature get out of control because it will light on fire and you will panic

Fry for a few minutes until your chicken is cooked. You can go until 165 degrees but if the chicken gets up to 155 degrees and stays there at least a minute it's also safe

Then assemble the sandwich by putting the separate parts together until it appears to be a singular object.
